Recipe: Banana and Pecan Traybake
I found this in You magazine supplement from the Daily Mail. I love reading the recipes that are extracted from books - this one was Davina McCall's. They always have a range of cooking recipes, alternative baking with healthier substitutes or just naughty treats!
Anyway, after 'Banana-gate' I thought I'd post a recipe that used many bananas! Sorry Joolz. I actually used only half the amount of maple syrup the ingredients suggests and it still tastes delicious!
Ingredients: 110g butter, soft
200g maple syrup
4 ripe bananas
4 tbsp whole milk (I use nut milk)
1 egg, beaten
1 tsp baking powder
1/2 tsp bicarbonate of soda
175g ground almonds
100g buckwheat flour
1 tsp cinnamon
100g pecans, chopped
extra pecans to garnish
Method: -Pre-heat oven to 180/Fan 160/Gas 4
-Grease tray/tin -Place all ingredients except pecans into food processor and blend -Stir in pecans
-Pour into chosen tray/tin
-Decorate with whole pecans
-Bake until middle comes out clean (my tray took approx 40-45 minutes)
(TOP TIP: Once cooled, cut it upside down so your garnished pecans don't sink into your cake as you try and cut it)
