Recipe: Banana Oat Cookies

So you’ve neglected the fruit bowl recently - those bananas you bought are going brown and overripe so they’re heading for the bin. But wait! As bananas ripen they get softer and sweeter. Perfect for baking with!

I have so many recipes to share using soft, ripe bananas but my favourite go to is the banana oat cookie! It’s so simple. You can easily mash up a couple of bananas with some oats, shape onto a baking tray and stick them in the oven. As with the granola there really isn’t much of a recipe to this one and you can add and subtract ingredients as you wish as long as there is banana and oats.

We add dessicated coconut, chopped nuts, seeds, chocolate, dates, dried fruit. This recipe example that I’m sharing uses cups to measure which takes out the need for weighing. It was really exciting to hear some of you made your own granola after my last post so I hope you give this one a try too!

Banana Oat Cookies

2 ripe bananas, mashed

1 cup oats

¼ cup dessicated coconut

¼ cup peanut butter

  1. Mix mashed banana with ingredients

  2. Add optional extras to own taste

  3. Spread into cookie shapes on greased/lined baking tray

  4. Put in oven at 180/Gas Mark 4 for 15-20 minutes
